Kangaroo Banquet - Thereby Hangs a Tail

Robert's eagle eye spotted a small sign : kangaroo tails for sale in the reception at our Alice Springs campsite. With mischief aforethought, Robert broke the news to Gen. Quick as a flash, she was into the shop where the general consensus was that the delicacy was "chewy".
Undaunted, Gen proudly paid $14 for a one metre long tail with skin on, wrapped in plastic and labelled as from Orroroo, South Australia.

Proud of her purchase, Gen discovered we needed a trip to the DIY shop, Bunnings, for a decent saw to cut up the tail for the campoven.

Soon we had said saw in hand at the campsite and started hacking. Not too hard, but next hurdle was to skin the pieces.

Steak knives came in handy and at last we had wrestled the tail into the campoven with veggies, bush herbs, and some lard.

Using an ancient bush cookbook we had bought at the town's Sunday market, we had our kangaroo by the tail. Three hours of simmering and we enjoyed a bottle of red as we tucked into the mutton-like roo - one tail fed two for two meals.
